Análisis del impacto de la transición hacia una alimentación saludable en Instituciones Educativas Mexicanas; Caso Universidad Hipócrates de Acapulco
Impact analysis of the transition to healthier eating in Mexican Educational Institutions: The Case of Universidad Hipócrates of Acapulco

La transición hacia opciones alimentarias saludables en entornos educativos puede modificar la disponibilidad, preferencias y prácticas alimentarias de los estudiantes; no obstante, puede generar resistencia inicial y síntomas de adaptación. Por ello, se realizó un estudio en la Universidad Hipócrates de Acapulco con el objetivo de describir la percepción estudiantil y los efectos durante la transición en la oferta de alimentos implementada a partir de marzo de 2025. Para ello se desarrolló una investigación de tipo transversal-observacional con un enfoque cuantitativo, con muestreo no probabilístico de participación voluntaria. Se aplicó un cuestionario en Google Forms, obteniendo 377 respuestas, excluyendo estudiantes de 1º y 2º semestre. Se estimaron frecuencias y porcentajes, explorando la asociación por sexo mediante prueba χ² (α = .05); aunque 290 (76.9%) consideró que los alimentos actuales son más saludables, la aceptación fue heterogénea: 124 (32.9%) se declaró muy inconforme y 110 (29.2%) indiferente. Asimismo, 291 (77.2%) reportó cambios en su alimentación personal y 311 (82.5%) percibió efectos en salud, energía o concentración, indicándo malestar físico en 216 (57.3%) durante las primeras semanas; en el desglose de síntomas (n=215) predominaron dolor de cabeza y fatiga; la transición fue percibida como un cambio hacia una mayor salud, pero coexistió inconformidad y síntomas de adaptación, por lo que se recomienda reforzar estrategias de aceptabilidad (sabor, variedad y costo), educación alimentaria y seguimiento longitudinal.
